Our name comes from one of our heroes, Auguste Escoffier. French cuisine as we know it was largely created by Auguste Escoffier at the end of the 19th century. He defined the mother sauces. He organized the professional kitchen and gave much-needed order to table service. We admire his methodical approach to food and service, which shaped French cuisine into what became the gold standard for chefs around the world. His name is the inspiration for our brand name, August.
